Their accuracy can be affected by the simplest things, like how much water you've drunk beforehand. But here's a few tricks to try.
Improve the accuracy
Strip off! You'll get better results if you take the reading naked.
Take your readings first thing in the morning after visiting the bathroom and before eating/ drinking so your hydration levels stay pretty constant.
Step on the scales four times every time you want to measure yourself. Discard the first reading - it'll be least accurate as the electrodes are still cold and your body is adjusting to being in the buff - then take the average of the last three.
To get an accurate weekly figure, repeat every day and calculate the average of all the readings.
