If you are pushed for time - take a roll and a box of salad with fish or meat added.
It saves the bread from getting soggy and you can dress the salad better than if you use it in a sandwich.
Invest in a few plastic boxes so you have more than one to enable you to take a variety of food with you - plus one of those insulated lunch bags.
Fruit and nut mix is a great idea - if you are counting calories it will be safer to weigh/measure a portion, rather than taking in the whole bag which may tempt you to eat more.
