Sorry Tom - I've only just seen this linked from your other post in Site Feedback. I know you found the answer yourself in another forum but just incase anyone else has similar problems I thought I would answer here...
Go into Tools | Options and go to the printing options (I think on Word 2003 it is in the General tab but I can't check I'm afraid as I'm on 2007). There should be an option to print field codes instead of values. Make sure this is not selected.
As a matter of interest there is a companion function to this in the editing section to displaying codes instead of printing them.
OK further to my post above, I have checked the options in Word 2003...
1. Go to Tools | Options.
2. On the View tab make sure 'Field Codes' is not selected. If 'Field Codes' is selected you will see the individual field codes displayed on screen. Slightly counter-intuitively though you will only get the field codes printed if you select the appropriate option on the Print tab and therefore it is not truely WYSIWYG compliant.
3. On the Print tab make sure 'Field Codes' is not selected. Again, if 'Field Codes' is selected on this screen, you will not necessarily see the codes in your document on-screen; they will only appear in the printout.
