Mansized Mains - Tortilla Pizza, serves 1

This is low fat, high speed cooking for people who want to keep an eye on the calories without sacrificing flavour.

You can buy 'half fat' and 'low fat' hard cheese but it still has a lot more fat than soft cheese - you're looking at 260 cals per 100g for hard cheese compared with 70 cals for soft varieties.

Soft cheese tastes nicer too. Every low fat hard cheese I've tried had the taste and texture of yellow plastic.

Mixing very low fat soft cheese with tomato puree and garlic is easier than grating hard cheese and you can’t carve an extra chunk of the block to eat whilst the pizza is cooking.
Add a good squirt of garlic puree to the mix and you won’t even miss the fat.

Calorie count

Approx 350 calories per serving

Kit you’ll need

1 tortilla wrap ( with not more than 200 calories )
100g 1% fat soft cheese or Quark
20g tomato puree
1 tsp garlic puree
3 slices of onion, separated into rings
50g sliced mushroom
50g drained tuna in water
Fresh or dried basil

Flat bladed knife
Tablespoon
Fork
Small dish or bowl
Large baking tray

Step by step instructions

- Set oven to gas 6, 200 deg c
- Place the soft cheese, tomato puree, garlic puree and herbs in the dish or bowl and mix together with the fork
- Place the tortilla wrap on the baking sheet
- Using the knife, spread the cheese and tomato mixture evenly over the wrap
- Scatter the onion rings, tuna and mushrooms over the top
- Place in the oven and bake for 10 mins
- Run the flat bladed knife under the pizza to free it from the tray, and then serve

Points for style

Use a garlic and corriander wrap for extra flavour

Thought I'd add this to the meals list! It's easy and quick to make plus is tasty, healthy and nutritious!
All you'll need equipment wise is a saucepan, frying pan and a hob.
The ingredients are:

50g Quinoa,
Soy Sauce,
100g Pork,
One Pepper,
100g Mushrooms,
100g Cherry Tomatoes.

Put the quinoa in the sauce pan and cover with boiling water then let simmer for 10 minutes.
Whilst this is happening, chop the pepper and mushrooms then dry fry the pork for 3 minutes then add the veg.
Drain the quinoa and add the soy sauce. You can also add Woucester Sauce if you like it sweet, or tabasco if you like a bit of heat. Mix it up then add it to the frying pan, chuck in the cherry tomatoes so they soften.
Stir it together for a minute and it's good to go!
You can bump up your greens by serving on a bed of spinach if you want, or even add some leaves to the frying pan to wilt it.
And there you have it, a nice little meal for about 350 calories!
