Hi Steven :-)


Quick answer on the brown rice is to add a stock cube to the cooking water - really peps it up.

You can also try adding some finely chopped spring onions if you like them, or a few toasted nuts, some garlic maybe or just good old black pepper.

You can also stir in a raw egg and some stir fry veg then microwave for a few seconds for instant low fat egg fried rice.

I have a great recipe for grilled salmon I'll dig out for you.

For anyone interested, i've found this recipe for the salmon and rice which sounds tasty:

Ingredients
200g/7oz long-grain rice
¼ onion, peeled and sliced
¼ pepper, de-seeded and sliced
85g/3oz mushrooms, sliced
1 salmon fillet, skin removed and diced
2 tbsp coriander, chopped
salt and freshly ground black pepper



Method
1. Bring a pan of water to the boil and cook the rice according to packet instructions. Drain.
2. Heat the oil in a pan and sauté the onion, pepper and mushrooms for a few minutes to soften. Stir in the salmon fillet then add the rice.
3. Stir-fry over a high heat for 4-5 minutes.
4. Stir in the fresh coriander and seasoning and heat for a further minute.
5. Remove from the heat and serve.

Hi Steven.
Salmon is easy, as most of the fish really.

If you have a steamer, fill the bottom part of it with water, drop a few baby potatoes in it and cook it as usual, then when it almost done put the top part of steamer on Put fillet in it on a bay leave and add some pepper and salt and slice of lemon on top. Steam it while you finishing cooking potatoes for few minutes. Serve with some salad on side, may be cut a few spring onions and drop them on the potatoes. Add to it a glass of wine and you’re ok :)
