Self explanatory title - need some inspiration outside of the box. Want to avoid the cliched and quite dull dinner and/ or drinks, cinema, etc.
Problem is we both live with parents so need things we can do evenings that doesn't involve alcohol - well for me as I'm driving, she can get drunk :-)
The only things I can think of are the Zoo (penguin walk!), err...late night shopping (??), mmm see I'm struggling for inspiration here. Any memorable dates you've been on that have been out of the ordinary?
Go on the ghost hunt tour of the old haunted city.
Swim is also a good idea - you could impress her with some fancy diving off the 10m board at the Royal Commonwealth Pool.

Day trip to Glasgow / Loch Lomond (it has been said that the train to Glasgow is one of the best bits in Edinburgh!), maybe a trip on the West Highland train to Fort William / Oban
Canal boat trip with picnic hamper, crystal classes, linen tablecloth etc.
Mary Kings Close on the High Street is worth going to. You could go to North Berwick or go for a walk on the beach in Mussleburgh or Prestonpans. There are loads of places near you that you could get to by train and you could both drink then!

Deer walk? Never heard of that before. Snowboarding is a great idea, we have hillend near us and I've done it before so can try and be the knowledgeable instructor ;-)

Pfft why would I want to go to Glasgow? Haunted tour is great idea, sure they do late ones as well. Maybe wait for a nice day for the picnic (might be waiting a while!)

Watching the sunset is a very romantic dating idea. The evening sky changes its color during the sunset. Long drive is also a good dating idea. You will get a chance to talk more plus you can get to drive a cool car for free. If you want to have fun, thrill, laughter, screams etc. all in your first date, head on to the nearest amusement park. Not only will you enjoy those roller-coaster rides, you and your date are sure to have the memorable time of your life.
