1 tablespoon cooking oil
1 x small onion
A clove or two of garlic
1 x large can chick peas (or soak and cook your own)
1 x large or 2 x medium potatoes (slightly more in volume than the chick peas)
1 x large can of tomatoes or a large handful of frozen spinach
Spices – hot chilli powder, cumin, turmeric and ginger (or whatever you like).
Soften the onion with the garlic in the oil in a frying pan or casserole.
Cut small pieces of the potato(es) and cook until soft (this take some time on a low heat - allow about 20 minutes), stirring occasionally.
Chuck in the chick peas.
Then add the tomatoes or the spinach. If using spinach, you may need to add a small amount of water.
Add spices to taste.
Cook for about another half hour, stirring occasionally.
Serve with naan bread or pitta (or rice if you must).
Chick peas are good but there's these other chick peas which are smaller in size and black, they are wonderful!
I don't know what you call them in English but these things are great source of protein.
I've tried tofu a few times and its pretty good when its marinated and put in other things - think stirfry, soaked with lots of soy sauce.
I tend to use quorn products myself - I've just more-or-less adapted a great recipe f
to make a morrocan quorn beef stew (and no, I don't work for them!)

OK, here is the Greek quorn beef stew...enjoy. This is supposed to be a low-calorie, low-carb and high protein dish, cooked with 400g lamb. So therefore very good for bodybuilding!! However, I swapped it round for quorn beef and it worked a treat. I cooked this last night for 2 confirmed carnivores and they fucking loved it.
1 packet frozen Quorn Beef (only comes in one size), defrosted
3 tsp ground cumin
2 tbsp olive oil
1 large red onion, finely chopped
1 garlic clove finely chopped
1 aubergine, cubed
400g chopped tomatoes (i.e. a tin)
1 red chilli, chopped
2 tbsp choppped black olives (i.e. a tin)
2 handfuls of fresh mint (it says here. If you're like me who doesn't exactly live in a cosmopolitan utopia, just use a goddam packet)
salt and ground black pepper
1) mix the beef and the cumin together but do not cook just yet. heat the oil in a heavy based saucepan and stir in the onion and garlic. Cook for 5 mins over a medium heat
2) Add the aubergine to the pan and toss it around to coat in the oil. Reduce the heat and cook for 5 mins until softended. Increase the heat and add the beef pieces and cook thoroughly (about another 5 mins).
3) Season and add the tomatoes. Add a wine-glassful of water, reduce heat, cover pan, and simmer for 25 minutes.
4) chop mint and stir most of it into the stew. Sprinkle with remaining mint and serve with plain greek yoghurt.
