I've bought a fillet steak. What is the best way to cook it?
Last time i sealed it in frying pan with olive oil on teh steak as well as seasoning.
I then put it in the oven, for what i thought was quite a while.
I don't think it was in long enough. I was aiming for Medium / Medium rare but ended up a bit rare.
get a good non-stick frying pan, and fry it in a litle wok oil (black pepper and ginger is best). Fry it on a high het for a few minutes each side. Poke it as you cook to tendarise it, when it start bleeding out of the top side then it is done. If the juices run clear then it's overcooked/well done.

I'd never cook steak in an oven :S
I have never done fillet in the oven either.
Just seal the meat on a high heat then cook away as greg says.
Take out of fridge, let it get to room temp.
coat in olive oil & season
put into very hot frying pan (no griddle pan :( )
seal top and bottom. (seal sides too?)
turn pan down and continue to cook in frying pan. prodding it to make sure it's still a bit bloody.
if you want medium/rare it's usually about 3-4 minutes each side depending on thickness of steak.
i think i remember something ramsay said about if it feels like your chin it's medium and if it feels like your nose its well done (ricky hatton must have a hell of a well done steak)
