Pimp my lunchbox

Oh stop it! You are so predictable!

Anyway, reviving this thread:

Most days I take my lunch to work - and most days it is either cheese / tomato / cucumber sandwich or pasta and pesto.

Occasionally I will have homemade houmous or feta salad, but that is rare.

It's partly because I'm not at my most coordinated first thing in the morning, so I amke things I can do on automatic pilot.

So, any suggestions as to how I can pimp my lunchbox - so to speak. I'm veggie, would go for healthier options and am not looking to carry any more extra pounds!

So, PJ? Anybody? Any ideas?

Excellent - if you could deliver to my office - Monday to Friday at about 12:45, that would be great! :-)

I have a wafer thin ham sandwich on Hovis Best of Both bread.

I follow this with Tesco frozen raspberries and blue berries with 0% fat onken natural yoghurt. The berries are frozen but defrost nicely during the morning and are juicy and skwishy by the time I eat them at 1:00pm (I normally have fresh fruit but blueberries and raspberries are too expensive just now and they don't keep any longer than one day in the fridge once the packaging is opened).

I may have a pear or banana as well.

Snack-wise I have a Nature Valley Grenola Bar mid-morning and some grapes or Nairn's stem ginger biscuits mid-afternoon, washed down with either black coffee or iced water - depending on how much caffeine I need to see me through the day!!

Quite a package - and my lunchbox is bulging too!!!!
